- Hand-harvested at peak aromatic ripeness, the must undergoes slow fermentation in stainless steel before completing fermentation in 225L French oak barrels. Aged on lees for 6 months with frequent batônnage and further bottle aging of at least 12 months, developing texture, complexity, and refined character.
- A meticulously crafted white wine from pebbly, clay-rich vineyards, combining floral elegance, silky texture, and layered complexity from precise vinification and extended aging.
Description
Vineyards grown in pebbly plains with red clay deposits. Very low yield. When the grapes reach the perfect aromatic ripeness, they are hand harvested with the first light of the dawn. Slow fermentation of the must starts in stainless steel tanks and continues in 225L French oak barrels. The wine rests on the lease for 6 months with frequent batônnage. This process will define the character of the wine. Additional bottle aging for not less than 12 months. Bright straw-yellow, a delicate floral bouquet along with notes of golden apple, acacia honey, and a slight spiciness. Balanced and silky on the palate, it closes to fruity and delicately toasted notes.
