Description
Monte Veronese DOP D’Allevo is a traditional semi-cooked, pressed cheese from the Lessini Mountains of Verona, crafted from pasteurised cow’s milk and matured for 12–18 months. Over time, its rind becomes firm and thick, while the interior develops a dense, straw-yellow paste with sparse or absent eyes. The flavour deepens with ageing, offering a robust, savoury, and slightly piquant profile, ideal for grating, slicing, or presenting on mature cheese boards.
