Description

A traditional Sardinian pasta made from durum wheat semolina, rolled into small irregular pearls and lightly toasted to develop a distinctive nutty, rustic flavour. Fregola is often featured in brothy fish or seafood stews, but also works beautifully cooked simply with butter, herbs, and stock, or tossed with roasted vegetables and shellfish for a warm pasta salad.
