Description
This traditional semi-cured cheese is crafted from pasteurised ewe’s milk, inspired by the legend of shepherds ripening curds in wicker baskets. Each wheel has a honey-coloured, textured rind and a compact, straw-yellow interior. When young, it offers a mild, slightly creamy, buttery, and subtly goaty flavour, which evolves with age into a crumbly, salty, slightly bitter, earthy, and tangy profile, reflecting the artistry of Italian cheesemaking.
